Is it better to use sugar or honey? The use of honey undoubtedly presents a number of advantages. First of all it provides the body with energy which is immediately available in the form of glucose and fructose. These are simple sugars and do not require any digestive process. Furthermore, fructose is a sugar with emollient properties for the throat, the stomach and the intestine. It helps eliminate the toxic and harmful substances that accumulate in the liver.

When does honey deteriorate? Honey's chemical and physical properties (high level of acidity, high concentration of sugar, presence of antibacterial substances) make it a hostile environment for bacteria, so honey can keep for a long time. High temperatures and direct sunlight accelerate its deterioration. Sugars are degraded progressively, aromas escape and the colour darkens. But it should be noted that even old honey never becomes harmful, although it does lose the qualities peculiar to the fresh product.
Honey should be consumed within two years of its production.
