TALKING ABOUT HONEY

Is liquid or crystalline honey better? The choice between liquid and crystallised honey is a question of personal taste. But it should be noted that only some honeys stay liquid for a long time (acacia, chestnut, and honeydew), whereas the other kinds are liquid because they underwent a thermal treatment. This completely cancels the crystallisation, but it's also detrimental to the quality of the honey and diminishes its nutritional value.

Is it true that sugar is added to make crystallised honey? No, this is not true. The tendency to crystallise is a natural process that almost all honeys go through. The only honeys to remain liquid for a long time, up to two years from harvest, are the acacia, chestnut, and honeydew

honeys, because they are rich in
fructose.

Is honey fattening? Honey is rich in calories (320 kcal to 100 g) so dieters should be careful about the quantity they consume.
But the advantage of honey lies in its high sweetening power, which is due to high fructose content. Thanks to fructose a food can be sweetened by using less calories than would be the case with sugar.
