Different nectars, different honeys
Honeys can be divided in many flower and single flower type. Single flower honey comes prevalently from a single kind of flower. The appearance, fragrance and flavour are peculiar to each kind of honey and can differ greatly from one to the other. Some honeys keep the fragrance of the flower they come from - like orange honey - and some recall the fruit by their colour, like chestnut. The character of wildflower honey can vary greatly depending on the area of production and the season of harvest. Some honeys, like the one that is harvested in spring in the Mediterranean bush, come from the nectar of many different flowers, while in others a single botanical species prevails mixed with the nectar of other less common flowers.
