Honeydew honey is liquid but in time it can crystallise. It is very
dark, almost black in colour. It has a vegetable fragrance of stewed fruit
and fig jam. The flavour, which is decidedly not as sweet as nectar honeys,
can even be slightly salty and remind of malt or prunes.
It's a special honey, appreciated by people who say they don't like honey.
