Sunflower honey rapidly solidifies, forming crystals which are often difficult to dissolve. It has a bright yellow colour and a light fragrance with a touch of straw, or wax, or even apricot jam. The flavour is slightly grassy and offers a special "refreshing" sensation like fondant candy.
It's an excellent table honey and is also used in confectionery and foodstuffs.
