Thistle honey crystallises a few months after the harvest. Its colour is an intense amber to deep yellow, often with a green hue to it. The fragrance, of medium intensity, recalls flowers and fruit at the same time. In the flavour there is also a subtle note of daisy and a very slightly bitter and astringent undertone.
It's a special honey, excellent as a table honey for those who appreciate its flavour.
