Dandelion honey solidifies very rapidly and often forms very small crystals. The colour is deep yellow or creamy beige if willow honey is also present. The fragrance is very intense, almost of ammonia. The flavour resembles the fragrance but is more delicate.
Because of its distinctive flavour, it is excellent as a table honey for those who like it.
