Honey in the kitchen

Honey can be used as an ingredient both in sweet and in savoury recipes. Sweet preparations that do not require cooking or preparations where honey is added at the end obviously offer an ideal use of this ingredient.
In this case it is more a question of suggestions for use of honey than of actual recipes. In the many cases where we habitually add sugar, honey can be substituted to the advantage of health and of the gourmets' pleasure.
But it is important to choose the right kind of honey for the food or the beverage it's being added to. The honey flavour should complete that of the other ingredients or else create a pleasing contrast.
Some examples?
A thirst-quenching drink can be made from water, eucalyptus honey and lemon juice. The evening herbal tea can be sweetened with lime tree honey.
