How to store honey
It is a well-known fact that honey keeps for a long time. Nonetheless,
as with other products of the same kind, this should not be taken
to mean that the quality improves as time goes by: quite the opposite.
The first problem that can present itself is fermentation. If the
honey has not been allowed to mature properly before extracting
it from the beehive, it will have too much water. This alteration
will be apparent after a few weeks. Fermented honey is easily recognizable:
it appears frothy and is bubbly. The liquid part is often separated
from the solid part, and the honey tastes and smells acid. Although
it is not harmful to health, fermented honey is an adulterated product,
and as such should be thrown away.
The risk of fermentation is greatest for those honeys that inevitably
contain a high percentage of humidity, that is, spring honeys
